ROASTED GARLIC AND MACADAMIA PESTO WITH GREEK YOGHURT SWIRL
I know… sometimes craving for a dessert sounds sacrilegious when we have the whole world pressuring us to reduce our sugar intake. The good news is, we have a healthy and mouth-watering sweet recipe for you.
Think about the rich combination of the butter-soft texture of roasted garlic, the crispy and nutty flavour of Macadamias and the enticing creaminess of Greek yoghurt. Now, stop doing whatever you are doing and run to the closest food market to get what you need to try this today!
Ingredients
1 cup roasted and salted macadamias
1 bulb of garlic
½ cup Pure South Press Macadamia Oil
1 tsp salt
½ tsp black pepper
2½ tbsp lemon juice
¼ tsp turmeric
2 tbsp dukkah
2 cups thick greek yogurt, to serve
Method
First make the pesto: place the macadamias in the blender and grind until very fine. Add the rest of the ingredients and blend until well incorporated and forms a rough paste.
To serve, swirl the pesto into the yogurt. The fresh, creamy bites of yogurt will compliment the pest perfectly, cutting through the richness of the garlic.
Place the yogurt in a serving bowl. Starting from the edge of the bowl, take a small spoonful of pesto, and drag it through the yogurt in a circular motion. The pesto will blend with the yogurt as you drag the spoon through. Continue until you have beautiful swirls running through the whole bowl.
Serve with a drizzle of Macadamia oil and a sprinkle of dukkah.
