Blondies are the chocolate-free version of the well-loved brownie. These are incredibly moreish, caramelly and colourful cakes, here topped with a creamy Macadamia nut butter icing.

And butter-free? Oh yes! Our plant-based recipe uses our delicately nutty Macadamia Nut Oil as a superior substitute. It’s ideal for use in cakes, bakes and desserts. Ingredients

Pure South Press Macadamia Oil Blondies

BLONDIES 

  • 180ml (¾ cup) Pure South Press Macadamia Nut Oil

  • 310ml (1¼ cup / 250g) brown sugar 

  • 60ml (¼ cup / 50g) treacle sugar 

  • 60ml (¼ cup / 60g) Macadamia or Almond butter

  • 125ml (½ cup / 125g) apple sauce

  • 5ml (1 tsp) vanilla extract 

  • pinch salt 

  • 625ml (2½ cups) self raising flour 

  • 45ml (3 tbsp) edible confetti cake sprinkles 

ICING

  • 500ml (2 cups / 250g) icing sugar

  • 15ml (1 tbsp) vegan margarine, softened 

  • 15ml (1 tbsp) Macadamia or Almond butter

  • 15ml (1 tbsp) almond milk

  • 5ml (1 tsp) vanilla extract 

TO SERVE 

  • 30ml (2 tbsp) edible confetti cake sprinkles

Method

Blondies
Pre heat the oven to 170°C. Line an 18cm x 18cm baking dish with baking paper. 

Combine the oil, brown sugar, treacle sugar and nut spread and whisk, 2 minutes. Whisk in the remaining ingredients, except for the confetti, and mix until smooth. Stir in the edible confetti. Spoon the mixture into the lined dish and smooth out the top. Bake until golden, but firm on top and tender to the touch, 30-35 minutes. 

Allow the blondies to cool in the dish.

Icing
Whisk all of the ingredients together until smooth. Spread or pipe the icing on to the cooled blondies and cut into 16 squares. 

To Serve
Sprinkle some edible confetti over each blondie. 

TIP: For a gluten-free version, replace the self rasiing flour with the same amount of gluten-free flour but also add in 10ml (2 tsp) baking powder and 5ml (1 tsp) xantham gum. 

TIP: The blondies can be served without the icing, if preferred.
